Serves 4

1 lb. pre-cut butternut squash
3 tbs. extra virgin olive oil
1 tsp. fresh rosemary chopped
small quantity balsamic vinegar
salt and pepper

Place your squash in a large mixing bowl. Add the olive oil along with some salt and pepper. Toss this to coat all the pieces and then you will place into a baking pan. Spread the pieces around and then place into a 400 degree pre-heated oven. Bake this for 40 minutes or until fork tender. When done, remove from the oven and place on a serving dish. Sprinkle rosemary all over the squash, drizzle the whole thing with the balsamic vinegar. Serve hot or at room temperature. This is a great vegetable dish to serve with any kind of roasted meat dish or on its own.
