Spätzles are fresh noodles made of eggs, milk and flour. Originating from German cuisine, they are normally served with saucy meat dishes, but they go equally well with vegetarian curries! Contrary to what you might think, one of the most important things to remember in making spätzles is that you must beat the batter until thick and sticky. You then press the batter through the small holes of a Spätzle maker to allow the noodles to drop into boiling water. Prior to having a Spätzle maker, I used to press the batter through the holes of a colander or kitchen sink stopper! Using the correct tool improves the process by reducing the time to make a dish.
