1 package firm tofu
2-3 chopped green onions
2 Tbsp. all purpose flour
1 ½ Tbsp. salad oil
2 Tbsp. sugar
2 Tbsp. soy sauce
2 Tbsp. mirin *
2 Tbsp. cooking sake *

Mix sugar, soy sauce, mirin and cooking sake and set aside.
Wrap tofu in a paper towel and heat in the microwave (medium heat level) for 3 minutes to remove water.
Slice tofu into 2 inch squares and coat each slice lightly with flour.
Heat frying pan (non stick frying pan is better) and put in salad oil. Cook tofu over medium heat and flip over until each side changes color.
Remove extra oil from the pan. Add liquid mixture and green onions, then simmer 2 minutes and serve immediately.
You can add mayonnaise or some spices for more flavors. Serve with rice or noodles. It’s simple and tasty!

* If you don’t have mirin (sweet Japanese cooking wine), you can substitute 2 Tbsp. sherry, white wine, or rice vinegar mixed with 1 tsp sugar.
* If you don’t have cooking sake (Japanese rice wine), you can substitute white wine, sherry, or vermouth.
